This March, to celebrate National Nutrition Month, we’ve joined forces again to share three easy, nutritious and absolutely delicious recipes. Whether you're a seasoned chef or a novice in the kitchen, these videos will guide you through each step, making cooking at home a breeze.
Veggie Migas: A Colorful Breakfast
Start your day with a burst of color and flavor! Our veggie migas recipe combines fresh vegetables and eggs in a dish that's as nutritious as it is delicious. Perfect for breakfast or brunch, migas are a traditional Tex-Mex dish that you can customize with your favorite veggies.
Ingredients:
• 3 corn tortillas
• ½ small red onion
• ½ red pepper
• ½ cup carrots
• ½ cup zucchini
• ½ cup tomatoes
• ½ cup green onions
• 1 jalapeño
• Low sodium salsa
• 2 extra large eggs
• 3 egg whites
• ¼ cup water
• 1 tsp canola oil
• Salt
• Black pepper

Packed with protein and loaded with flavor, these muffin cups can be made in advance and stored in the refrigerator for a grab-and-go breakfast that doesn't compromise on nutrition or taste.
Ingredients:
• 2 tsp canola oil
• 8 frozen turkey sausages
• 1 onion
• 1 container sliced mushrooms
• 1 ¾ cup egg substitute
• ¼ cup skim milk
• ¼ tsb pepper
• 1 cup shredded fat-free cheddar cheese

• ¾ cup popcorn kernels
